Trilogies, in my opinion, are awesome. I think often 3 books on a certain set of characters are just enough. It gives the author room to maneuver them in different situations and it leaves you wanting more. Not to say that longer series can't be good, but there's just something about a trilogy that works for me. Have a look at this list of current trilogies.
This is a list of CURRENT trilogies that I'm aware of. I'm not sure if the authors plan on adding to them or not, but for now there are three books in the series and they deserve to be on the list!
